Celery Salad with Pistachios & Dates

Servings: 6

Ingredients:

  • ½ cup shelled (peeled) pistachios

  • 8 celery stalks, thinly sliced on a diagonal

  • 6 pitted dates, chopped

  • 3 tablespoons fresh lemon juice

  • ¼ cup extra-virgin olive oil

  • Salt and freshly ground black pepper

  • Crushed red pepper flakes (optional)

  • 2 ounces shaved Parmesan (shredded ok too)

Instructions:

Toss celery, pistachios, and dates in a medium bowl. Season with salt, pepper and red pepper flakes. Add olive oil and lemon juice and toss gently; add parmesan, toss again, and serve.
